
Leeds restaurant The Swine Bistro has launched a new lunchtime menu offering three courses for £30, bringing its award‑winning, produce‑led cooking to a daytime audience. Designed to suit everything from quick midweek lunches to relaxed afternoon dining, the new menu reflects the bistro’s bold, seasonal style while placing sustainability at its core.
The lunch offering has been developed with a strong focus on zero‑waste cooking, led by sous chef Angus Evans. Drawing on his experience as former head chef at Leeds organic restaurant Eat Your Greens, Evans has introduced innovative techniques to maximise ingredients and minimise waste across the kitchen.
A standout example is the Potato Pancake with Braised Chicken, Leek Top Relish and Walnut Ketchup.
Crisp potato pancakes are made using leftover Sunday roast potatoes, which are transformed into a smooth purée before frying. Shredded chicken is gently reheated in a reduced stock infused with tamari, coriander seed, cumin and fennel. A vibrant relish made from leek tops – a part of the vegetable often discarded – adds freshness, while a rich walnut ketchup delivers depth and balance.
The dish showcases how thoughtful cooking and creative use of leftovers can reduce waste while still delivering bold, satisfying flavours.
Angus Evans said: “Sustainability has always been integral to how I cook, and Jo and Stu were keen for me to expand this within The Swine Bistro menu.
“It’s about ensuring every ingredient works harder. It’s not just about nose‑to‑tail cooking, but about using every part of our produce more thoughtfully – repurposing leftovers and turning overlooked ingredients into something genuinely exciting on the plate. It shows how creativity in the kitchen can go hand in hand with reducing waste.”

The launch reflects the continued evolution of The Swine Bistro under husband‑and‑wife team Jo and Stu Myers, whose cooking has earned a loyal following in Leeds for its creativity, sustainability and strong sense of flavour.
The Swine Bistro features in the Good Food Guide’s Top 100 Best Local Restaurants, SquareMeal, and was most recently named one of the Yorkshire Post’s 50 Best Restaurants in Yorkshire.
The restaurant is located opposite the Arndale Centre on Otley Road, Headingley, and is open Wednesday to Sunday for lunch and dinner.
