East Yorkshire chicken features in UK Sausage Week winner

The team at East Yorkshire poultry supplier, Soanes Poultry, are celebrating after supplying the chicken for an award winning sausage for UK Sausage Week (29th October to 4th November).

Middleton on the Wolds-based Soanes Poultry supplied chicken drumstick meat and liver to local butcher F. Leake, who won the Best Independent Butcher: North East – Innovative Category for its Chicken, Chicken Liver, Leek and Stilton sausage in the annual UK Sausage Week competition. 

F. Leake’s proprietor, Thomas Bollon was one of 27 winners to be presented with an award at a celebration lunch at Plaisterers’ Hall, London that was hosted by celebrity chef, author, broadcaster and cookery school businesswoman Sophie Grigson on Monday. The event marked the start of the annual sausage week initiative that celebrates and promotes British sausages.

A delighted Mr Bollon said: “We have been so busy over the last three years that we have not entered a single competition and now we have won, at our first attempt – we’re over the moon!

“I would like to take this opportunity to thank our amazing and very, very local poultry supplier Soanes Poultry for not only challenging us to create a sausage with a difference, but also for supplying us with such a great product.”

Ben Lee, Sales Co-ordinator at Soanes Poultry worked with Thomas and butcher Nathen Ransley on the competition entry: “We’re delighted for Thomas and the team and their well-deserved win in the UK Sausage Week competition.

“We chose drumstick meat over thigh meat for taste and carcase balance, whilst the surprise addition of liver gives an amazing depth and texture which is enhanced with the creamy leek and the saltiness of the stilton.

“It’s the first time that we have supplied our drumstick meat for sausages, but it worked perfectly and we will now be rolling the product out to all of our customers.”
